How to Cook Chicken Biriyani? ? ?


  • INGREDIENTS REQUIRED:

  • Skinless chicken thighs cut into one inch piece - 3/4 kg,

  • Chopped large onion - 1 ,

  • Refined oil - 2 tablespoon ,

  • Garlic clove cut into thin strips - 6

  • Unsalted butter - 2 tablespoon ,

  • Peeled and thinly sliced carrot - 3,

  • Basmati rice - 2 cup,

  • Chicken broth 4 1/2 cup,

  • Curry powder - teaspoon,

  • Salt 1 1/2 teaspoon ,

  • Peeled and minced fresh ginger - 2 tablespoon,

  • Plain yogurt - 2 cup,

  • Dried clove - 1/4 teaspoon ,

  • Saffron threads - 1/4 teaspoon,

  • Cinnamon -1 ,

  • Cayenne pepper - 1/4 teaspoon.


PREPARATION of Chicken Biryani :



Step 1 :Take a large sauce pan and heat it on the stove . Add the oil to the pan and then add the onion and carrot and sauté it till it gets softened it takes about five minutes.


Step 2: Now add the chicken to it and stir it often until it gets the brown colour.


Step 3 : Add the curry powder and a portion of garlic stir it constantly till the aroma is felt .Then stir in the broth to the pan and scrape the brown bits in the bottom of the pan.


Step 4:Then cover the pan using a lid and make the flame simmer and let it cook for ten minutes


Step 5 : Now place the rack in the centre of the oven and preheat the oven to 350 degree Fahrenheit .Take a baking dish and grease the pan with the little butter and set it aside.


Step 6:Take another sauce pan and heat it . Now add the remaining garlic and ginger to the pan and stir it continuously until deep aroma is felt.


Step 7 : Now add the rice, salt, saffron, cloves, cayenne, and cinnamon stick. Stir well to coat the rice in the fat and pour in the remaining 31⁄2 cups broth. Bring to a simmer.


Step 8 : Cover this with a lid and reduce the heat to low, and simmer until the rice is fairly tender but still with a little tooth to the bite, until almost all the liquid has been absorbed. Set aside off the heat.


Step 9 : Remove the chicken from the broth using spoon and then place it in a bowl and add the yogurt. Keep the remaining broth in the pan itself.


Step 10 :Now take a baking dish and spread the half cooked rice evenly over the bottom of the pan .Then top the rice with chicken mixture. Again spread the rice over the chicken Then pour the reserved broth over the dish.


Step 11:Then cover the baking pan with a aluminium foil and bake it for forty five minutes in the oven .Now the chicken biryani is ready. Before serving cool it to room temperature complimenting with raita mixing curd, salt and sliced onions. Serve the chicken briyani garnished with chopped cilantro and cashews.
